Want to make a special breakfast for your family? Maybe it’s a special day. Or maybe your family has just been snowed in and you want to create some fun memories. Or, maybe you just want to try something new. This festive waffle recipe provides a familiar feel with a great new twist–cocoa and a touch of cinnamon. And using fresh blueberries adds some vital nutrients to this delicious breakfast treat! The cinnamon will nicely complement a nice cup of herbal tea, for those who prefer it to orange juice.

Festive Blueberry-Cocoa Waffle Recipe the Whole Family Will Love
- Waffle iron
- 2 eggs
- 2 cups self-rising flour
- 1 3/4 cups milk
- 1/4 cup butter (melted)
- 1 tablespoon white sugar
- 3 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon cocoa
- 1 pt blueberries (fresh)
- cinnamon
- freshly whipped whipping cream ((You can also use Redi-Wip made from real cream, although it’s not quite the same.))
- Place eggs in a large bowl and hand-whip for 1-2 minutes.
- Whip in milk and vanilla, then whip in melted butter.
- In a separate bowl, combine all dry ingredients and stir together.
- Combine dry ingredients with egg mixture and stir just enough to combine. Then, gently fold in 3/4 pint of blueberries, reserving the rest for garnish.
- On a waffle iron sprayed with no-stick spray, ladle some of the waffle mixture on the waffle iron, being careful not to overfill, (Overfilling the waffle iron will cause the waffle to squeeze outside the edges of the iron as the dough cooks. Mostly, this just causes a mess. But if too much of the dough overflows, it will be underdone around the edges, and you’ll need to trim the edges off–or your breakfast will be really gross.)
- For each serving, place the desired number of waffles on a plate (2-3 is what most people seem to prefer) and top with a nice dollop of whipped cream. I always prefer freshly whipped cream, but you can substitute Redi-wip if you’re short on time.
- Sprinkle generously with cinnamon and sprinkle a few fresh blueberries on the plate. Serve with your choice of hot tea, coffee, or juice.

Don’t be surprised if your family enjoys these waffles so much that they beg you to make it a regular part of your breakfast regimen. If the thought of breaking out the blueberries every Sunday sounds like an impossibility, don’t worry. These waffles freeze wonderfully, you can make them once a month, if you want, and freeze them in a freezer bag for later use. Just defrost in the microwave, add cinnamon and whipped cream, and you’re good to go.
(P.S.–When freezing, be sure to remove as much air from the freezer bag as possible to avoid freezer taste or ice crystals. Wrapping each later of waffles with wax paper also helps.)
